Winter Wild Botanicals; Resilient Greens and Roots


Wild Botanicals is a series of classes created on the basis of the harvest season in Snoqualmie Valley. Classes are in-person, outside and within the ecosystem of the plant(s). Students will learn botanical ID, look alikes, growth habits and harvesting ethics, plant processing and preparations. We will work with both wild and cultivated plants with edible and/or medicinal uses based on the class theme. Students are encouraged to bring their own in-field medicine making materials to experience the full process of field to kitchen medicine.



Resilient Greens and Root Medicine

The resiliency of late winter root medicine teaches us patience, potency, and groundedness.

The greens of late winter teach us to trust in the seasons and go forward with courage.

The ideal time to harvest roots is late Autumn or early Spring. We are at the cusp of the Winter/Spring season. It’s now time to capture root medicine before the Spring upsurge. It’s the time where burdock, dandelion and yellow dock are filled with nutrients to help cleanse our digestive system and clear our skin. For those daring herbaceous greens that kick off the Spring green season, we take note of their resiliency through this turbulent while enjoying their flavors as we come out of the scarce times of growing year. May we delight over violet, chickweed, osoberry and early stinging nettle.

Tuition: 

Adult: $40 OR $100 for three class series

Parent/Child: $50 for one day OR $130 for three class series

Open to ages 12 and up (8-12 with an adult).
